The grapes come from the single Hetny vineyard, where young six year old vines on loess soils give very bright, lively fruit. The wine is pressed in whole bunches, and the juice is split in two: half ferments and ages in a stoneware egg, half in stainless steel. The tank keeps the fruit clean and crisp, while the egg adds gentle texture
